Salmon/Chicken Marinade

I love this marinade! You can use it for chicken as well as salmon, too. It's the marinade I made for the chicken we had at the cabin over General Conference weekend. Here are the directions for how to make the Salmon.

SALMON
Put fish on foil
Put olive oil on surface of fish (like a tablespoon)
Top with garlic salt and pepper
Put small slices of butter on top of fish and underneath
Sprinkle brown sugar, quarter inch layer over surface
Sprinkle teriyaki sauce on top
Roll up foil over fish

350 degrees for 10 minutes

CHICKEN
It depends on how much chicken you are making, and I don't really have exact measurements! I always just kind of throw it in, ha! You'll want to add some water so the chicken can really soak it all up. Marinade for at least 5 hours.
Small amount of olive oil
Garlic Salt
Pepper
Soy Sauce
Brown Sugar
Water

Cheesy Loaf

This recipe was first made by Heidi and it was so good, but we struggled to find the recipe again.   I finally contacted her.   This is what we ate at the cabin recently.

Cheesy Loaf

A big loaf - round preferably, of Sourdough or other dense bread
1 lb. cheese -  any kind you prefer (I used Monterrey Jack)
1/2 -1 cup butter (I think I used 3/4 cup)
1/2 c. green onions, chopped small (optional)
2 - 3 tsp. poppy seeds
Set bread in aluminum foil that is big enough to wrap around it.

Cut loaf in checkerboard almost all the way through

Cut cheese in long cubes and insert in the slits.

Mix other ingredients.  Pour over the bread.   Wrap in foil.

Bake at 350 for 15 minutes.
Uncover and cook for an additional 10 more min.

Whole Wheat Yogurt Pancakes

This is a recipe from a friend of mine that we love.  It is supposed to be a "healthy" recipe but it really is super yummy.  The vanilla really comes out in the flavor of the pancakes.  It uses plain Greek yogurt as the fat, honey or agave as the sugar, and you can add flax seed (optional) as well.  We just mix it up in our blender but you can do it however you want.  Enjoy!



Whole Wheat Yogurt Pancakes             
1 cup whole wheat flour                                               2 large eggs
4 tsp. baking powder                                                    2 tsp. vanilla extract
2 T sweetener of choice (I use honey or agave)           Pinch of salt
⅔ cup + 2 T milk                                                          2 T ground flax seed
4 T plain Greek yogurt

Mix ingredients together and cook on skillet.  Makes 8 medium pancakes.

Southwest Chicken Salad

Becky and Parker were eating this at the Davis family party.   It looked really good.  It is similar to Black Bean Salsa but has chicken in it so it is a main dish.   They were eating it in pita bread.


4 cups cooked cubed chicken (I like to saute my chicken on the stove in some olive oil)
2 cups frozen corn (I just use one can)
1 cup chopped red peppers
1 cup chopped red or sweet onion
1 cup minced fresh cilantro
1 avacado (or more, if you're a lover like I am)
1 can black beans

Dressing:
3 Tbsp. lime juice
3 Tbsp. olive oil
4 tsp. honey
2 tsp. ground cumin
1 tsp. salt
1 tsp. chili powder
1/2 tsp. coarsley ground pepper


In large bowl, combine salad ingredients. In a small bowl, whisk the dressing ingredients; pour over chicken mixture and toss to coat. Refrigerate before serving. Can serve as a salad with/without salad greens or in a pita or in a tortilla wrap.

White Chocolate Chunk Cookies

My  neighbor brought me these cookies the other day and I loved them!!  Really yummy and healthier than most cookies!!

White Chocolate Chunk Cookies

1 cup coconut oil
1/2-2/3 cup brown sugar
1/2-2/3 cup honey
3 eggs, one at a time
1 tsp. vanilla
Cream together.

1 cup flour
1 1/2 cup wheat flour (I use wheat pastry flour)
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup coconut (I use unsweetened)
1/2 cup rolled oats
1 12oz. package of white chocolate chips
1/2 cup chopped almonds

bake at 375 degrees for 8-12 minutes.  Cool on pan 1 minutes.

Note from my neighbor: When I make it for my family, I like to use the 1/2 cup of sugar because we are getting used to less sugar and my family doesn't seem to mind.  If I make it for others, I usually use the 2/3 cup.  Also, you kinda have to judge when you've added enough flour.  It should be fairly stiff.
